Cheesy Potatoes (aka funeral potatoes)

shred enough potatoes to mostly fill a 9x13 pan
3 c. cheese
2 cans cream of anything soup (mush, chicken, celery, mix and match!)
1 c. sour cream
sauteed onions to taste
1 cube butter drizzled on top
crushed goldfish crackers

Preheat oven to 350 degrees.  Microwave the grated potatoes for a few minutes to get them cooking partially.  Add cheese, soup, sour cream, onions, and mix well.  Pour melted button on top and do not stir.  Pour crushed goldfish crackers on top and do not stir.  Cook 30-45 minutes.
